- Prepare the Dough:
- In a small bowl, dissolve the sugar in lukewarm water. Sprinkle the yeast over the water and let it sit for about 10 minutes until it becomes bubbly.
- In a large bowl, combine the flour and salt. Create a well in the center and add the yeast mixture and olive oil.
- Mix until a dough forms. Knead the dough on a floured surface for about 10 minutes until it becomes smooth and elastic.
- Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 to 1.5 hours, or until doubled in size.
- Shape the Pide:
- Preheat your oven to 450°F (230°C). If you have a pizza stone, place it in the oven to preheat.
- Punch down the risen dough and divide it into two equal portions. Shape each portion into a ball.
- On a floured surface, flatten each ball into a round or oval shape, about ½ inch thick.
- Prepare the Topping:
- In a small bowl, whisk together the egg yolk, Greek yogurt, and olive oil.
- Assemble the Pide:
- Place the shaped dough on a piece of parchment paper or a baking sheet lined with parchment paper.
- Brush the top of each dough with the egg mixture. Use your fingers or a spoon to create a crisscross pattern on the surface of the dough.
- Sprinkle sesame seeds and nigella seeds on top if desired.
- Bake:
- Transfer the parchment paper with the dough onto the hot pizza stone or place the baking sheet in the oven.
- Bake for about 15-20 minutes, or until the pide is golden brown and cooked through.
- Serve:
- Allow the pide to cool slightly before slicing and serving. Enjoy warm with dips, cheeses, or as a side to your favorite meal.
