Garlic Chicken Fried Rice

  1. Cook the Rice: If you haven’t already, cook the jasmine rice according to package instructions. For best results, use rice that has been cooked and cooled beforehand, which helps maintain a firmer texture when stir-fried.
  2. Prepare the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced chicken pieces, season with salt and pepper, and cook until the chicken is fully cooked through and lightly browned, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Sauté the Aromatics: In the same skillet, add the remaining tablespoon of vegetable oil. Sauté the minced garlic for about 30 seconds until fragrant, being careful not to burn it.
  4. Stir-fry the Vegetables: Add the mixed vegetables to the skillet and stir-fry for 3-4 minutes until they are tender yet crisp. Push the vegetables to one side of the skillet.
  5. Scramble the Eggs: Pour the beaten eggs into the empty side of the skillet. Allow them to set slightly for a few seconds, then gently scramble them until fully cooked. Mix the eggs with the vegetables.
  6. Combine Ingredients: Add the cooked rice and the cooked chicken back into the skillet with the vegetables and eggs. Stir everything together gently to combine.
  7. Season the Fried Rice: Drizzle soy sauce, oyster sauce, and sesame oil over the rice mixture. Stir well to ensure all ingredients are evenly coated and heated through. Taste and adjust seasoning with additional soy sauce, salt, or pepper as needed.
  8. Finish and Garnish: Remove the skillet from heat. Garnish the garlic chicken fried rice with chopped green onions for added flavor and a pop of color.
  9. Serve: Divide the garlic chicken fried rice among serving plates or bowls. Enjoy hot as a main dish or as a delicious side to complement other Asian-inspired dishes.
