Baked Cheddar Parmesan Cauliflower Bites

  1. Prepare and Preheat:
    Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
  2. Prepare the Cauliflower:
    Wash the cauliflower thoroughly and cut it into bite-sized florets. Pat dry with a kitchen towel to remove excess moisture.
  3. Prepare the Coating Mixture:
    In a large bowl, combine shredded cheddar cheese, grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well to ensure even distribution of flavors.
  4. Coat the Cauliflower:
    In a separate bowl, beat the eggs until smooth. Dip each cauliflower floret into the beaten eggs, allowing any excess to drip off. Roll the florets in the cheese and breadcrumb mixture, pressing gently to coat each piece thoroughly.
  5. Bake to Perfection:
    Arrange the coated cauliflower florets in a single layer on the prepared baking sheet. Bake in the preheated oven for 20-25 minutes, or until the bites are golden brown and crispy on the outside, and tender on the inside.
  6. Garnish and Serve:
    Remove from the oven and let cool slightly. Garnish with freshly chopped parsley for a pop of color and freshness. Serve warm as a delicious appetizer, snack, or side dish.
