Ingredients:

  • 8 oz (225g) penne pasta (or your preferred pasta shape)
  • 2 boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons olive oil, divided
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 packet (1.25 oz / 35g) fajita seasoning mix
  • 1 cup chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 1 cup shredded cheese (such as cheddar or Monterey Jack)
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish (optional)
