  1. Cook the pasta according to the package instructions in a large pot of salted boiling water. Drain and set aside.
  2. Season the sliced chicken breasts with salt, pepper, and 1 tablespoon of fajita seasoning mix.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken slices and cook until they are browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.
  4. In the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell peppers, onion, and minced garlic. Cook, stirring occasionally, until the vegetables are tender, about 5 minutes.
  5. Return the cooked chicken to the skillet with the vegetables. Sprinkle the remaining fajita seasoning mix over the chicken and vegetables, and stir to combine.
  6. Pour in the chicken broth and heavy cream (or half-and-half). Bring the mixture to a simmer, then reduce the heat to low.
  7. Add the cooked pasta to the skillet, stirring until it is well coated with the creamy sauce.
  8. Stir in the shredded cheese until it is melted and the sauce is smooth and creamy.
  9. Season the chicken fajita pasta with additional salt and pepper to taste, if needed.
  10. Garnish with fresh cilantro or parsley, if desired, and serve hot.

Enjoy your delicious homemade chicken fajita pasta, packed with flavor and creamy goodness! It's perfect for a quick and satisfying dinner.
