- Prepare the Vegetables:
- Start by shredding the carrot and cabbage. A food processor can make this step quick and easy, but a grater works just fine too.
- Finely chop the onion. These veggies will add a wonderful crunch and flavor to your omelette.
- Cook the Vegetables:
- Heat the olive oil in a non-stick skillet over medium heat.
- Add the chopped onion and sauté for 2-3 minutes until it becomes translucent.
- Add the shredded carrot and cabbage to the skillet. Cook for another 3-4 minutes, stirring occasionally, until the vegetables are tender but still slightly crunchy.
