Egg white roll and paradise cream

Ingredients

For the sponge cake using only egg whites
  • 250 g albumen
  • 150 g sugar
  • 120 gfarina 00
  • 1 teaspoon baking powder (optional)
  • knob of butter (for the pan)

For the egg white roll paradise cream

  • 200 ml sweetened vegetable cream for whipping
  • 100 g condensed milk
  • 1 tablespoon wildflower honey (or acacia)
To decorate the roll with egg whites and paradise cream
  • to taste icing sugar
