Pumpkin Bars with Cream Cheese Frosting
Servings: Makes about 24 bars

Ingredients

For the Pumpkin Bars:
– 2 cups all-purpose flour
– 1 1/2 cups granulated sugar
– 2 teaspoons baking powder
– 2 teaspoons ground cinnamon
– 1 teaspoon baking soda
– 1/2 teaspoon salt
– 1/4 teaspoon ground ginger
– 1/4 teaspoon ground cloves
– 1/4 teaspoon ground nutmeg
– 4 large eggs
– 1 can (15 oz) pure pumpkin puree
– 1 cup vegetable oil
For the Cream Cheese Frosting:
– 1 package (8 oz) cream cheese, softened
– 1/2 cup (1 stick) unsalted butter, softened
– 1 teaspoon vanilla extract
– 4 cups powdered sugar, sifted

Directions

 

1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper to ensure a non-stick bliss.
2. Whisk together the flour, sugar, baking powder, cinnamon, baking soda, salt, ginger, cloves, and nutmeg in a large bowl. Cozy blend of spices – that’s the secret to the delightful flavor.
3. In another bowl, mix the eggs, pumpkin puree, and vegetable oil until well combined. It should remind you of a harvest sunset.
4. Pour the wet mixture into the dry ingredients, stirring just until they’re best friends and the batter is smooth.
