Bull’s Eye Biscuits are shortcrust pastry sweets filled with cream or jam with the characteristic hole in the centre. They are made by overlapping two discs of shortcrust pastry, one of which is perforated in the centre. Precisely this characteristic, which makes them resemble the bull’s-eye egg, gave them the homonymous name. They can be made in different shapes such as hearts, flowers, stars or simply round and filled in various ways: for example with chocolate spread or jam. I made the bull’s eye biscuits with cherry jam in the shape of a flower using special moulds, but you can also make them with a simple glass and use a bottle cap to make the hole in the centre. I filled the biscuits with cherry jam because I find it just the right amount of tartness and perfect with the sweet taste of the shortcrust pastry, but you can fill the biscuits with the jam you like best or with a spread of your taste.
