- In a large bowl, combine the boiling water and the orange Jell-O.
- Whisk until the Jell-O is completely dissolved.
- Stir in the cold water and chill the mixture in the refrigerator for 20 minutes, or until it begins to thicken.
- Add the vanilla cheesecake pudding mix to the thickened Jell-O and whisk until well combined.
- Return the bowl to the refrigerator and chill for another 20 minutes, or until the mixture thickens further.
- Fold in the Cool Whip, mandarin oranges, and miniature marshmallows until evenly mixed.
- Refrigerate the fluff for 1 to 2 hours to set.
- Before serving, garnish with additional mandarin oranges, marshmallows (optional), and a couple of mint leaves for a fresh touch.
