Zucchini with oatmeal

- Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic, sauté until onion becomes translucent.
- Add diced zucchini to the skillet, and cook for about 3-4 minutes until zucchini starts to soften.
- Stir in the oats and vegetable broth. Season with salt and pepper to taste.
- Reduce heat to low, cover the skillet, and simmer for 10-15 minutes or until oats are cooked and zucchini is tender.
- Remove from heat and let it sit for a few minutes before serving. Optionally, top with grated Parmesan cheese.
