Zucchini with oatmeal

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic, sauté until onion becomes translucent.
  2. Add diced zucchini to the skillet, and cook for about 3-4 minutes until zucchini starts to soften.
  3. Stir in the oats and vegetable broth. Season with salt and pepper to taste.
  4. Reduce heat to low, cover the skillet, and simmer for 10-15 minutes or until oats are cooked and zucchini is tender.
  5. Remove from heat and let it sit for a few minutes before serving. Optionally, top with grated Parmesan cheese.
