Ingredients

  • For the  Salad:
    • 2 cups canned chickpeas, rinsed and drained
    • 1 cup cherry tomatoes, halved
    • 1 cucumber, diced
    • 1/2 red onion, finely chopped
    • 1/4 cup chopped fresh parsley
    • 1/4 cup chopped fresh mint (optional)
  • For the Dressing:
