Ingredients:

  • 1 egg
  • 2 tablespoons almond milk (or any milk of choice)
  • 2 teaspoons peanut butter (preferably natural, without added sugar)
  • 2 tablespoons cocoa powder (unsweetened)
  • 1 tablespoon sweetener of your choice (such as stevia, erythritol, or monk fruit)
  • 1 teaspoon baking powder
  • Optional: 1 teaspoon vanilla extract

Instructions:

  1. Prepare the Mug:
    • Lightly grease a microwave-safe mug with cooking spray or oil to prevent sticking.
  2. Mix Ingredients:
    • In a small bowl or directly in the mug, whisk together the egg and almond milk until well combined.
  3. Add Peanut Butter and Cocoa Powder:
    • Add peanut butter, cocoa powder, sweetener, baking powder, and optional vanilla extract to the egg mixture in the mug.
  4. Combine Thoroughly:
    • Whisk everything together until smooth and no lumps remain. Ensure the cocoa powder is fully incorporated into the mixture.
  5. Microwave Cooking:
    • Place the mug in the microwave and cook on high power (1000 watts) for about 2 minutes. Cooking times may vary depending on your microwave’s wattage, so adjust accordingly. The dessert is done when it has risen and set in the center.
  6. Cooling and Serving:
    • Carefully remove the mug from the microwave using oven mitts, as it will be hot. Let the dessert cool for a minute or two before enjoying.
  7. Optional Garnishes:
    • Optionally, garnish your coffee dessert with a dusting of cocoa powder, a dollop of whipped coconut cream (for a vegan option), or a sprinkle of chopped nuts.
