Carrot Apple Oat Cake

Instructions:

 

In a large bowl, combine 80 g of oat flakes, a pinch of salt, 10 g of coconut flour, 5 g of baking powder, and 1/2 teaspoon of cinnamon. Mix well.
Add the Wet Ingredients:

In a separate bowl, beat 2 medium eggs and add 35 g of sweetener (stevia or your choice).
Pour in 15 g of melted butter and mix well.
Combine Ingredients:

Add the wet ingredients to the dry ingredients and mix until well combined.
Prepare the Carrot and Apple:

Chop 1 medium carrot and 1 medium apple into small pieces.
Add the chopped carrot and apple to the batter and mix well.
Add the Walnuts:

Stir in 30 g of chopped walnuts.
Prepare the Baking Tray:

Grease an 18 x 13 cm (7 x 5 inches) baking tray with butter.
Pour the batter into the tray and spread it evenly.
Decorate with additional nuts if desired.
Bake:

Preheat your oven to 180°C (360°F).
Bake for 35 minutes or until a toothpick inserted into the center comes out clean.
Cool and Serve:

Leave the bars to cool in the tray.
Once cooled, cut into squares and serve.
Serving Suggestions:

Enjoy the bars with a cup of tea or coffee for a perfect snack.
Pack them in lunchboxes for a healthy treat on the go.
