Weight Watchers Sausage and Mash with Onion Gravy

  1. Cook the Sausages: Preheat a non-stick skillet over medium heat. Add the sausages and cook, turning occasionally, until browned and cooked through, about 10-12 minutes. Remove from skillet and set aside.
  2. Prepare the Mashed Potatoes: While the sausages are cooking, place the potatoes in a large pot and cover with water. Bring to a boil over medium-high heat and cook until potatoes are tender, about 15 minutes. Drain the potatoes and return them to the pot. Mash with a potato masher until smooth. Gradually add the almond milk (or low-fat milk) until desired consistency is reached. Season with salt and pepper to taste.
  3. Make the Onion Gravy: In the same skillet used for the sausages, heat olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until softened and caramelized, about 15-20 minutes. Add minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. Thicken the Gravy: Sprinkle flour over the onions and garlic, stirring constantly for 1 minute. Gradually whisk in the beef or vegetable broth, scraping up any browned bits from the bottom of the skillet. Stir in Worcestershire sauce if using. Simmer until the gravy thickens, about 5-7 minutes. Season with salt and pepper to taste.
  5. Serve: Divide the mashed potatoes among serving plates. Top each portion with a cooked sausage and spoon the onion gravy over the sausages. Garnish with fresh thyme or parsley if desired.
