Baked Stuffed Shrimp Casserole

1. Preheat the oven to 375°F (190°C) and grease a baking dish.
2. In a mixing bowl, combine the gluten-free breadcrumbs, Parmesan cheese, minced garlic, chopped parsley, olive oil, salt, and pepper.
3. Place the peeled and deveined shrimp in the prepared baking dish.
4. Spoon the breadcrumb mixture evenly over the shrimp.
5. Bake in the preheated oven for 12-15 minutes, or until the shrimp are cooked through and the breadcrumbs are golden brown.
6. Serve hot with lemon wedges on the side.
