4 chicken thighs, bone-in and skin-on
1 cup basmati rice
2 cups water
1 onion, finely chopped
2 garlic cloves, minced
1/2 cup dried barberries (Zereshk), rinsed
2 tablespoons olive oil
1/2 teaspoon saffron threads, dissolved in 2 tablespoons hot water
Salt and pepper to taste
1/4 cup slivered almonds (optional)
1/4 cup chopped fresh parsley for garnish
