  1. Prepare the Kale:
    • Start by thoroughly washing the kale in cold water. Remove the tough stems and chop the leaves into bite-sized pieces.
  2. Cook the Onions and Garlic:
    • In a large skillet, heat the olive oil over medium heat.
    • Add the chopped onions and cook until they start to soften and become translucent, about 5 minutes.
    • Add the minced garlic and cook for another minute until fragrant.
  3. Sauté the Kale:
    • Add the chopped kale to the skillet. Stir frequently and cook until the kale begins to wilt and becomes tender, about 5 to 7 minutes.
    • If the kale starts to stick to the pan, add a few tablespoons of water.
  4. Season the Dish:
    • Season with salt, pepper, and red pepper flakes if you prefer a bit of heat.
    • Just before removing from heat, add a splash of vinegar or a squeeze of fresh lemon juice to brighten the flavors.
