
1. Season chicken and sausage with 3 tsp of Cajun seasoning. In a large pot, heat 1 tbsp oil over medium heat and sear chicken and sausage until golden-brown.

2. For the roux, mix 1 1/4 cups vegetable oil and flour in the same pot, stirring continuously until it reaches a deep brown color.

3. Add bell pepper, celery, and onions to the roux, cook until soft. Gradually stir in chicken stock and bring to a simmer. Add okra.

4. Season with remaining Cajun seasoning, black pepper, gumbo file, and hot sauce. Return chicken and sausage to the pot.

5. Simmer until flavors meld and chicken is fully cooked. Adjust salt to taste.
