Cajun Chicken and Andouille Sausage Gumbo Recipe

➡️ 1. Season chicken and sausage with 3 tsp of Cajun seasoning. In a large pot, heat 1 tbsp oil over medium heat and sear chicken and sausage until golden-brown.
➡️ 2. For the roux, mix 1 1/4 cups vegetable oil and flour in the same pot, stirring continuously until it reaches a deep brown color.
➡️ 3. Add bell pepper, celery, and onions to the roux, cook until soft. Gradually stir in chicken stock and bring to a simmer. Add okra.
➡️ 4. Season with remaining Cajun seasoning, black pepper, gumbo file, and hot sauce. Return chicken and sausage to the pot.
➡️ 5. Simmer until flavors meld and chicken is fully cooked. Adjust salt to taste.
