1/2 cup (113g) cold unsalted butter, cut into 1/2-inch cubes
2 to 4 tablespoons cold water

1 & 1/2 cups (148g) old-fashioned rolled oats
1/4 cup (59ml) heavy cream
4 ounces (113g) bittersweet chocolate, roughly chopped
3/4 cup (150g) firmly packed light brown sugar
5 tablespoons (70g) unsalted butter, melted
1/2 teaspoon salt
1/4 teaspoon ground ginger
1 cup (236ml) dark corn syrup
2 teaspoons apple cider vinegar
1 teaspoon vanilla extract
4 large eggs
