  1. Preheat Oven: Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Prepare Puff Pastry: Roll out the puff pastry on a lightly floured surface to remove any creases and make it a bit thinner.
  3. Add Mustard (Optional): If using mustard, spread a thin layer over the puff pastry, leaving a border of about 1 inch around the edges.
  4. Layer Ham and Cheese: Evenly distribute the sliced ham over the mustard (or directly on the pastry if not using mustard). Sprinkle the shredded cheese evenly over the ham.
  5. Season and Roll: Season with freshly ground black pepper. Carefully roll up the puff pastry from one of the long sides to form a log. Pinch the seams and ends to seal the strudel.
  6. Egg Wash: Place the strudel seam-side down on the prepared baking sheet. Brush the top and sides with the beaten egg to give it a golden, glossy finish. If desired, sprinkle sesame seeds or poppy seeds on top.
  7. Bake: Bake in the preheated oven for 25-30 minutes, or until the pastry is puffed up and golden brown.
  8. Cool and Slice: Allow the strudel to cool for a few minutes before slicing it into pieces. Serve warm.

Tips:

  • You can add some sautéed mushrooms, spinach, or caramelized onions for extra flavor.
  • This strudel is best enjoyed fresh out of the oven, but it can also be reheated in a 350°F (175°C) oven for about 10 minutes if you have leftovers.
