- 3 ripe bananas, mashed
- 1/2 cup unsweetened applesauce
- 1/3 cup plain Greek yogurt (non-fat or low-fat)
- 1/3 cup honey or maple syrup
- 1 teaspoon vanilla extract

- 1 teaspoon baking soda

Instructions:
1. Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease a loaf pan for banana bread or line a muffin tin with paper liners for muffins.
2. Mash the Bananas:
- In a large mixing bowl, mash the ripe bananas with a fork.
3. Mix Wet Ingredients:
- Add the applesauce, Greek yogurt, honey (or maple syrup), and vanilla extract to the mashed bananas. Mix until well combined.
4. Combine Dry Ingredients:
- In a separate bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, and ground cinnamon.
5. Combine Wet and Dry Ingredients:
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
6. Add Nuts (Optional):
- If using nuts, fold them into the batter.
7. Bake:
- For Banana Bread: Pour the batter into the greased loaf pan and bake for approximately 50-60 minutes or until a toothpick inserted into the center comes out clean.
- For Muffins: Divide the batter evenly among the muffin cups and bake for about 18-22 minutes.
8. Cool and Slice:
- Allow the banana bread or muffins to cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
