Skinny Banana Bread Or Muffins

  • 3 ripe bananas, mashed
  • 1/2 cup unsweetened applesauce
  • 1/3 cup plain Greek yogurt (non-fat or low-fat)
  • 1/3 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 3/4 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped nuts (optional)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease a loaf pan for banana bread or line a muffin tin with paper liners for muffins.

2. Mash the Bananas:

  • In a large mixing bowl, mash the ripe bananas with a fork.

3. Mix Wet Ingredients:

  • Add the applesauce, Greek yogurt, honey (or maple syrup), and vanilla extract to the mashed bananas. Mix until well combined.

4. Combine Dry Ingredients:

  • In a separate bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, and ground cinnamon.

5. Combine Wet and Dry Ingredients:

  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.

6. Add Nuts (Optional):

  • If using nuts, fold them into the batter.

7. Bake:

  • For Banana Bread: Pour the batter into the greased loaf pan and bake for approximately 50-60 minutes or until a toothpick inserted into the center comes out clean.
  • For Muffins: Divide the batter evenly among the muffin cups and bake for about 18-22 minutes.

8. Cool and Slice:

  • Allow the banana bread or muffins to cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.

9. Enjoy:

  • Slice the banana bread or enjoy the muffins as a healthier snack or breakfast option
