For the Pizza Dough:

  • 2 cups all-purpose flour
  • 1 teaspoon active dry yeast
  • 3/4 cup warm water
  • 1 teaspoon sugar
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt

For the Toppings:

  • 1/2 cup pizza sauce (preferably low-sugar)
  • 1 cup reduced-fat shredded mozzarella cheese
  • 1/2 cup turkey pepperoni slices
  • Fresh basil leaves for garnish (optional)

Instructions:

  1. Activate the Yeast:
    • In a small bowl, combine warm water, sugar, and active dry yeast. Allow it to sit for 5-10 minutes until foamy.
  2. Prepare the Dough:
    • In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead and Rise:
    • Transfer the dough to a floured surface and knead for about 5 minutes until smooth. Place the dough in a lightly oiled bowl, cover it, and let it rise in a warm place for 1-2 hours or until doubled in size.
  4. Preheat and Roll:
    • Preheat your oven to 425°F (220°C). Roll out the dough on a floured surface to your desired thickness.
  5. Cut and Arrange:
    • Using a round cookie cutter or a glass, cut out small circles from the rolled dough. Place them on a baking sheet lined with parchment paper.
  6. Toppings Assembly:
    • Spread a teaspoon of pizza sauce on each dough circle, sprinkle with reduced-fat shredded mozzarella, and top with a slice of turkey pepperoni.
  7. Bake to Perfection:
    • Bake in the preheated oven for 10-12 minutes or until the edges are golden brown and the cheese is melted and bubbly.
  8. Garnish and Serve:
    • Garnish with fresh basil leaves if desired. Allow the pizza bites to cool for a few minutes before serving.
