Instructions:
- Activate the Yeast:
- In a small bowl, combine warm water, sugar, and active dry yeast. Allow it to sit for 5-10 minutes until foamy.
- Prepare the Dough:
- In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Mix until a dough forms.
- Knead and Rise:
- Transfer the dough to a floured surface and knead for about 5 minutes until smooth. Place the dough in a lightly oiled bowl, cover it, and let it rise in a warm place for 1-2 hours or until doubled in size.
- Preheat and Roll:

- Cut and Arrange:
- Using a round cookie cutter or a glass, cut out small circles from the rolled dough. Place them on a baking sheet lined with parchment paper.
- Toppings Assembly:
- Spread a teaspoon of pizza sauce on each dough circle, sprinkle with reduced-fat shredded mozzarella, and top with a slice of turkey pepperoni.
- Bake to Perfection:
- Bake in the preheated oven for 10-12 minutes or until the edges are golden brown and the cheese is melted and bubbly.
- Garnish and Serve:
- Garnish with fresh basil leaves if desired. Allow the pizza bites to cool for a few minutes before serving.
