Fried Cabbage

  1. Begin by heating a large skillet or frying pan over medium heat. Add the chopped bacon and cook until crisp and golden brown, rendering out the fat.
  2. Once the bacon is cooked, remove it from the skillet using a slotted spoon and set it aside on a plate lined with paper towels to drain.
  3. In the same skillet with the bacon fat, add the thinly sliced onion and minced garlic. Sauté until softened and fragrant, about 2-3 minutes.
  4. Add the thinly sliced cabbage to the skillet, tossing to combine with the onions and garlic. Spread the cabbage out into an even layer and let it cook undisturbed for a few minutes to allow it to brown slightly.
  5. Sprinkle the smoked paprika and red pepper flakes (if using) over the cabbage, along with salt and black pepper to taste. Stir well to incorporate the seasonings evenly.
  6. Continue cooking the cabbage, stirring occasionally, until it is tender yet still retains a bit of crunch, about 10-15 minutes.
  7. Drizzle the apple cider vinegar over the cooked cabbage, stirring to coat evenly. This adds a subtle tangy flavor that balances out the richness of the bacon.
  8. Return the cooked bacon to the skillet, tossing it with the cabbage mixture to distribute it evenly throughout.
  9. Taste and adjust the seasoning as needed, adding more salt, pepper, or vinegar to suit your preferences.
  10. Once the cabbage is cooked to your liking and all the flavors have melded together beautifully, remove the skillet from the heat.
  11. Transfer the fried cabbage to a serving dish, garnishing it with freshly chopped parsley for a pop of color and freshness.
