  1. Activate the Yeast: In a small bowl, combine the warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
  2. Prepare the Dough: In a large mixing bowl, combine the flour and salt. Add the activated yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the Dough: Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a lightly greased bowl, cover with a clean towel, and let it rise in a warm place for 1 hour or until doubled in size.
  4. Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside.
  5. Prepare the Cheese Filling: In a small bowl, combine the shredded mozzarella, grated Parmesan, and chopped parsley if using. Set aside.
  6. Shape the Bread: Punch down the risen dough and roll it out into a rectangle, approximately 12×8 inches. Sprinkle the cheese mixture evenly over the dough, leaving a small border around the edges.
  7. Twist and Cut the Bread: Starting from one long edge, tightly roll the dough into a log. Using a sharp knife, cut the log lengthwise down the center, leaving one end intact. Twist the two halves together, keeping the cut sides facing up.
  8. Form the Bread: Shape the twisted dough into a circle or oval and carefully transfer it to the prepared baking sheet.
  9. Final Rise: Cover the twisted bread with a clean towel and let it rise for an additional 15-20 minutes.
  10. Bake: Lightly spray the top of the bread with cooking spray. Bake in the preheated oven for 20-25 minutes or until golden brown and cooked through.
  11. Cool and Serve: Allow the bread to cool slightly on a wire rack before slicing. Serve warm and enjoy!
