Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
Open the cans of cinnamon rolls and cut each roll into quarters. Set aside the icing for later use.
In a large bowl, combine the thinly sliced apples, granulated sugar, brown sugar, ground cinnamon, ground nutmeg, lemon juice, and cornstarch. Mix until the apples are well-coated.
Spread a layer of chopped cinnamon roll pieces on the bottom of the greased baking dish.
Top with half of the spiced apple mixture, spreading it evenly over the cinnamon rolls.
Add another layer of chopped cinnamon roll pieces over the apples.
Spread the remaining spiced apple mixture on top, followed by a final layer of chopped cinnamon roll pieces.
Cover the baking dish with aluminum foil and bake in the preheated oven for 35 minutes.
Remove the foil and bake for an additional 10-15 minutes, or until the cinnamon rolls are golden brown and cooked through.
Let the lasagna cool slightly, then drizzle the reserved icing over the top before serving.
Variations & Tips
For a nutty addition, sprinkle chopped pecans or walnuts between the layers of apples and cinnamon rolls. You can also experiment with different fruit combinations such as adding cranberries or pears for a unique flavor profile. If you're looking for a caramel touch, drizzle some caramel sauce over the top prior to serving. For a more health-conscious version, consider using whole wheat cinnamon rolls and reducing the sugar content slightly.
