WW GRILLED CHEESE SANDWICH

  1. Prep the Ingredients:
    • Preheat your skillet or griddle over medium heat.
    • In a small bowl, combine the shredded cheddar and mozzarella cheeses.
    • Lightly toast the slices of whole wheat bread in a toaster or toaster oven.
  2. Sauté the Veggies:
    • Heat 1 teaspoon of olive oil or butter in a skillet over medium heat.
    • Add the thinly sliced red onion and sliced mushrooms to the skillet, sautéing until softened and slightly caramelized, about 5-7 minutes.
    • Season with salt and pepper to taste, then remove from heat and set aside.
  3. Assemble the Sandwiches:
    • On two slices of toasted bread, evenly distribute half of the shredded cheese mixture.
    • Top the cheese with the sautéed red onion and mushrooms, followed by a layer of baby spinach leaves.
    • Sprinkle the remaining shredded cheese over the spinach, then cover each sandwich with the remaining two slices of toasted bread.
  4. Grill the Sandwiches:
    • Lightly coat the preheated skillet or griddle with cooking spray.
    • Place the assembled sandwiches on the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted and gooey.
    • Press down gently on the sandwiches with a spatula while cooking to ensure even browning and melting.
  5. Serve and Enjoy:
    • Once the sandwiches are cooked to perfection, remove them from the skillet and let them cool for a minute or two.
    • Slice the grilled cheese sandwiches diagonally for a classic presentation, and serve immediately while warm and gooey.
