1. Start by cutting the salmon into bite-sized pieces, ensuring that there are no bones. Season the pieces lightly with salt and pepper.
2. In a large skillet, heat the olive oil over medium-high heat. Add the salmon bites and cook for about 2-3 minutes on each side, or until they are golden brown and cooked through. Remove them from the skillet and set aside.
3. In the same skillet, reduce the heat to medium and add the butter. Allow it to melt and begin to bubble. Add the minced garlic and cook until fragrant, about 1 minute.
4. Stir in the honey, soy sauce, and lemon juice, mixing well to combine. Let the sauce simmer for a couple of minutes until it begins to thicken.
5. Return the salmon bites to the skillet, gently tossing them in the glaze until they are well-coated. Allow them to cook for an additional 2-3 minutes, letting the flavors meld together.
6. Transfer the salmon bites to a serving platter, making sure to drizzle any extra glaze over the top. Garnish with freshly chopped parsley and serve immediately.
Variations & Tips
For a little kick of heat, you can add a pinch of red pepper flakes to the glaze. If you prefer a less sweet flavor, reduce the amount of honey or substitute some of it with maple syrup. This recipe can also be adapted for larger fillets if you prefer not to cut the salmon into bites, just adjust the cooking time accordingly. For a gluten-free version, make sure to use tamari instead of soy sauce.
