Hearts of Palm pasta vegetable sauté

  1. Prepare Ingredients:
    • Rinse and drain the hearts of palm pasta.
    • Chop the onion and halve the grape tomatoes.
    • Sliver the garlic cloves.
    • Chop the fresh basil and parsley.
  2. Sauté Vegetables:
    • Spray a non-stick skillet with olive oil spray and heat over medium heat.
    • Add the chopped onion to the skillet and sauté until it starts to become golden, about 5-7 minutes.
    • Add the halved grape tomatoes to the skillet and continue to sauté until the onions are lightly golden and the tomatoes begin to soften, about 3-4 minutes.
    • Add the slivered garlic and sauté for an additional 1-2 minutes, until the garlic is fragrant and slightly golden.
  3. Season and Cook:
    • Season the mixture with salt and pepper to taste.
    • Squeeze the juice of one lemon over the sautéed vegetables and stir to combine.
    • Add the rinsed and drained hearts of palm pasta to the skillet.
    • Sprinkle in the Trader Joe’s 21 Seasoning Salute, Italian seasoning, Mrs. Dash Original seasoning, and paprika. Stir well to ensure everything is evenly coated.
    • Add the chopped basil and parsley, stirring to combine.
    • Heat the mixture through, about 2-3 minutes, until everything is warmed.
  4. Serve:
    • Serve immediately, garnished with freshly grated vegan cheese if desired.
