Sardine meatballs: the simple and delicious Sicilian recipe

Sardine meatballs are a typical second course of Sicilian cuisine based on sardines, a blue fish rich in proteins and mineral salts, characterized by tender meat and a strong flavor, which makes it perfect for preparing different dishes.
Preparation is quick and easy: after cleaning, the sardines are chopped and mixed with the rest of the ingredients, i.e. eggs, pecorino cheese, breadcrumbs, pine nuts, raisins and a fragrant mixture of mint, parsley and garlic.
The mixture is then used to form small meatballs, which are then dipped in rice flour for a crispier result: the traditional recipe, in fact, calls for them to be fried first and then cooked in tomato sauce; those who prefer a lighter variant can cook them in the oven instead .
