Chicken Bicol Express Recipe

1. Saute onion and garlic, until soft and fragrant.
2. Add bagoong (sautéed shrimp paste), siling labuyo (red chili) and siling haba (finger chilies).
Stir for 1 to 2 minutes.
3. Add chicken, stir until color turns medium brown.
4. Add coconut milk. Then season with ground black pepper and bagoong if needed.
5. Simmer until chicken is tender and the sauce thickens.
