Homemade egg flan recipe, super delicious!

Preparation:

Let’s start by preparing the caramel. In a saucepan over medium heat, mix 80 g of sugar with 20 g of water. Do not stir the mixture, just let the sugar dissolve in the water.
Once the sugar has completely dissolved, you can increase the heat slightly and bring the mixture to a boil. However, it is important not to stir at this point so that the sugar does not crystallize.
When the caramel starts to turn golden brown, add 25g of warm water to stop the caramelization process. Be careful as the caramel is extremely hot and may splatter. It is always safe to use oven mitts at this point.
Pour the caramel into the bottom of a heatproof bowl before it completely hardens. Set aside to cool while you prepare the flan mixture.

For the flan

In a large bowl, beat the eggs until well mixed but not too foamy.
Add 95 g sugar and stir briefly.
In a saucepan, heat the milk and cream over medium heat until small bubbles appear on the sides of the pan. Do not let the mixture boil.
Remove the milk and cream from the heat and slowly pour over the beaten eggs, stirring constantly so that the eggs do not cook in the heat of the milk.
Once the mixture is well blended, strain it through a sieve and pour it over the caramel in the heatproof bowl.
Place the container on a larger baking sheet and place a cloth or kitchen towel on the bottom of the sheet. Fill the sheet with hot water until it reaches about halfway up the container with the flan mixture.
Cover the pan with aluminum foil and bake at 160 °C (300 °F) for about 50 minutes, or until the flan is set around the edges but still slightly wobbly in the center.
After baking, allow the flan to cool to room temperature before wrapping it and placing it in the refrigerator for at least 6 hours, or preferably overnight.
The next day, run a knife around the edges of the flan and carefully turn it out onto a serving plate.
