Preparation
Boil the 4 potatoes in 2 glasses of water until cooked. Then peel them and mash them with a fork or masher.
In a bowl, mix the mashed potatoes with 200 ml of warm potato broth, 1 tablespoon of sugar, 1 teaspoon of salt, 1 egg, 12 grams of dry yeast and between 550 and 600 grams of flour. Knead until you get a soft and elastic dough.
Add 2 tablespoons of vegetable oil to the dough and knead again for a few more minutes. Cover the bowl with a cloth and let the dough rest for 40 minutes.
Meanwhile, grate 1 onion and season with 500 grams of minced meat, salt and spices to taste. Add 50 ml of boiling water and let the mixture rest for 10 minutes.
Divide the dough into portions and form small pancakes. Place a spoonful of meat filling in the center of each pancake and carefully seal it.
Heat some oil in a frying pan and fry the tartlets over low heat until golden brown on both sides.
