"Creamy Zucchini and Yellow Squash Bake

1. Preheat your oven to 375°F (190°C). Grease a baking dish with butter or cooking spray.
2. In a large skillet over medium heat, melt the butter. Stir in the flour and cook for 1-2 minutes until it forms a smooth roux.
3. Gradually whisk in the milk until the mixture is smooth and thick.
4. Add the cheddar cheese and Parmesan cheese to the skillet, stirring until melted and smooth. Season with salt and pepper to taste.
5. Toss the sliced zucchini and yellow squash in the cheese sauce until evenly coated.
6. Transfer the zucchini and squash mixture to the prepared baking dish, spreading it out evenly.
7. If desired, sprinkle breadcrumbs over the top of the dish for added crunch.
8. Bake in the preheated oven for 25-30 minutes, until the vegetables are tender and the top is golden brown and bubbly.
9. Garnish with chopped parsley before serving."
