Ingredients:
2 cups mashed potatoes, cooled (preferably left over from the day before for better texture)
1/2 cup grated cheddar cheese (or any cheese of your choice, like mozzarella for a gooey center)
1/4 cup finely chopped green onions (optional, for added flavor)
1/4 cup chopped fresh parsley (optional, for color and flavor)
Salt and pepper, to taste
2 eggs, beaten
1 cup all-purpose flour
1 cup breadcrumbs
Oil for frying (vegetable, canola, or peanut oil works well)

Direction :
Prepare the Mashed Potato Mixture:
In a large bowl, combine the mashed potatoes, green onions, parsley, salt, and pepper. Mix well until all ingredients are evenly distributed.
Form the Cheese Core:
Take a small amount of the mashed potato mixture and flatten it in the palm of your hand.
Place a small cube or spoonful of cheese in the center of the flattened potato.
Carefully encase the cheese with the potato, rolling it into a ball. Ensure the cheese is completely covered to prevent it from leaking out during frying.
