New York cheese cake

1. Prepare the base: Mix the crushed cookies with the melted butter. Press this mixture into the bottom of a springform cake pan and refrigerate while you prepare the filling.
2. Make the filling: In a large bowl, beat the cream cheese with the sugar until smooth. Add the heavy cream, the eggs one by one, the vanilla extract and the lemon zest. Beat until everything is well integrated.
3. Bake: Pour the cheese mixture over the base in the mold. Bake in a preheated oven at 160°C for approximately 55-60 minutes or until the center is almost set.
4. Cool: Let the cheesecake cool in the oven with the door ajar for 1 hour. Then refrigerate for at least 4 hours or overnight.
5. Serve: Before serving, you can add the jam of your choice on top if you wish.
