Weight Watchers Cheesecake Parfaits

  • 1 1/2 cups fat-free Greek yogurt
  • 8 oz fat-free cream cheese, softened
  • 1/4 cup powdered erythritol (or preferred sweetener)
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 1 tsp lemon zest

For the Graham Cracker Crust Layer:

  • 1 cup crushed graham crackers (about 8 sheets)
  • 2 tbsp unsweetened applesauce
  • 1 tsp cinnamon

For the Topping:

  • Fresh mixed berries (strawberries, blueberries, raspberries)
  • Fresh mint leaves for garnish
