Leftover Mashed Potato Cheese Puffs!

1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly grease with cooking spray.
2. In a mixing bowl, combine the leftover mashed potatoes, shredded cheddar cheese, grated Parmesan cheese, chopped chives or green onions, all-purpose flour, and eggs. Season with salt and pepper to taste.
3. Stir the mixture until well combined and forms a thick batter.
4. Using a spoon or cookie scoop, portion the batter into small mounds and place them on the prepared baking sheet, leaving some space between each puff.
5. Flatten each mound slightly with the back of the spoon or your fingertips.
6. Bake in the preheated oven for 20-25 minutes, or until the puffs are golden brown and crispy on the outside.
7. Remove from the oven and let cool slightly before serving.
8. Serve the mashed potato cheese puffs warm as a delicious snack or side dish.
