FRIED POTATOES AND ONIONS

  • 4 medium potatoes, peeled and diced
  • 1 large onion, thinly sliced
  • 2 teaspoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish (optional)

Instructions:

  1. Prepare Potatoes: Peel the potatoes and dice them into small cubes.
  2. Slice Onions: Thinly slice the onion.
  3. Heat Olive Oil: In a large skillet, heat the olive oil over medium heat.
  4. Add Potatoes: Once the oil is hot, add the diced potatoes to the skillet. Cook, stirring occasionally, until the potatoes begin to brown, about 8-10 minutes.
  5. Add Onions: Add the sliced onions to the skillet with the partially cooked potatoes. Stir to combine.
  6. Season: Sprinkle the garlic powder, paprika, salt, and pepper over the potatoes and onions. Stir well to evenly distribute the seasonings.
  7. Cook Until Golden: Continue cooking the potatoes and onions, stirring occasionally, until the potatoes are golden brown and crispy on the outside and tender on the inside, and the onions are caramelized, about 10-15 minutes more.
  8. Garnish and Serve: Once the potatoes and onions are cooked to your liking, remove the skillet from the heat. Garnish with fresh parsley or chives, if desired, and serve hot.
