Weight Watchers Chicken Nuggets with Fresh Salad

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a shallow dish, combine the whole wheat breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
  3. Dip each chicken piece into the breadcrumb mixture, coating evenly on all sides. Place the coated chicken nuggets on the prepared baking sheet.
  4. Lightly spray the tops of the chicken nuggets with cooking spray to help them brown and crisp up in the oven.
  5. Bake the chicken nuggets in the preheated oven for 15-20 minutes, or until they are golden brown and cooked through, flipping halfway through cooking.
  6. While the chicken nuggets are baking, prepare the salad. In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, and black olives.
  7. In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and pepper to make the dressing.
  8. Drizzle the dressing over the salad and toss until everything is evenly coated.
  9. Once the chicken nuggets are done baking, remove them from the oven and let them cool slightly.
  10. Serve the chicken nuggets alongside the fresh salad and enjoy!
