- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a shallow dish, combine the whole wheat breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
- Dip each chicken piece into the breadcrumb mixture, coating evenly on all sides. Place the coated chicken nuggets on the prepared baking sheet.
- Lightly spray the tops of the chicken nuggets with cooking spray to help them brown and crisp up in the oven.
- Bake the chicken nuggets in the preheated oven for 15-20 minutes, or until they are golden brown and cooked through, flipping halfway through cooking.
- While the chicken nuggets are baking, prepare the salad. In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, and black olives.
- In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and pepper to make the dressing.
- Drizzle the dressing over the salad and toss until everything is evenly coated.
- Once the chicken nuggets are done baking, remove them from the oven and let them cool slightly.
- Serve the chicken nuggets alongside the fresh salad and enjoy!
