Mozzarella Stuffed Meatballs

  • 1 lb lean ground beef (90/10 or leaner)
  • 1/2 cup breadcrumbs (whole wheat or gluten-free for a healthier option)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and pepper to taste
  • 4 oz part-skim mozzarella cheese, cut into small cubes
  • 1 cup marinara sauce (sugar-free or homemade for a healthier option)

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. In a large mixing bowl, combine the lean ground beef, breadcrumbs, grated Parmesan cheese, chopped fresh parsley, egg, minced garlic, dried oregano, dried basil, salt, and pepper. Mix until well combined.
  3. Take a small portion of the meat mixture and flatten it in the palm of your hand. Place a cube of mozzarella cheese in the center, then gently fold the meat mixture around the cheese, shaping it into a meatball. Repeat with the remaining meat mixture and mozzarella cubes.
  4. Arrange the stuffed meatballs on the prepared baking sheet, spacing them evenly apart.
  5. Bake the meatballs in the preheated oven for 20-25 minutes, or until they are cooked through and golden brown on the outside.
  6. In a separate saucepan, heat the marinara sauce over medium heat until warmed through.
  7. Serve the mozzarella stuffed meatballs hot, drizzled with warm marinara sauce. Optionally, garnish with additional grated Parmesan cheese and chopped parsley for extra flavor and visual appeal.
