  1. Prepare the Yeast Mixture:
  • In a small bowl, combine the warm water and sugar. Sprinkle the yeast over the top and let it sit for about 5 minutes, until it becomes frothy.
  1. Make the Dough:
  • In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil. Stir until the dough begins to come together.
  1. Knead the Dough:
  • Turn the dough out onto a floured surface and knead for about 8-10 minutes, until it becomes smooth and elastic. You can also use a stand mixer with a dough hook for this step, kneading on medium  speed for about 5-7 minutes.
  1. First Rise:
  • Place the dough in a lightly oiled bowl, turning it to coat all sides with oil. Cover with a damp cloth or plastic wrap and let it rise in a warm place for about 1 hour, or until it has doubled in size.
  1. Add the Cheese:
  • Punch down the dough and turn it out onto a floured surface. Flatten it slightly and sprinkle the shredded cheddar and grated Parmesan cheese over the dough. Knead the cheese into the dough until it is evenly distributed.
  1. Shape and Second Rise:

Shape the dough into a loaf and place it in a greased 9×5-inch loaf pan. Cover and let it rise again for about 30 minutes, or until it has risen just above the edge of the pan.

If desired, brush the top of the bread with melted butter immediately after removing it from the oven. Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Enjoy!
