BLTA Chicken Salad Lettuce Wraps

  • 2 cups cooked chicken breast, shredded or diced
  • 4 slices turkey bacon, cooked and crumbled
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon mayonnaise (light or reduced-fat)
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • 8 large lettuce leaves (such as romaine or butter lettuce)

Instructions:

  1. In a large mixing bowl, combine the cooked chicken breast, crumbled turkey bacon, diced avocado, halved cherry tomatoes, finely chopped red onion, and chopped cilantro.
  2. In a separate small bowl, whisk together the plain Greek yogurt, mayonnaise, lime juice, salt, and pepper to make the dressing.
  3. Pour the dressing over the chicken salad mixture and toss until well combined.
  4. To assemble the lettuce wraps, place a scoop of the chicken salad mixture onto each lettuce leaf.
  5. Gently fold the sides of the lettuce leaf over the filling, then roll it up tightly to form a wrap.
  6. Repeat with the remaining lettuce leaves and chicken salad mixture.
