- 2 cups cooked chicken breast, shredded or diced
- 4 slices turkey bacon, cooked and crumbled
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons plain Greek yogurt
- 1 tablespoon mayonnaise (light or reduced-fat)
- 1 tablespoon lime juice
- Salt and pepper to taste
- 8 large lettuce leaves (such as romaine or butter lettuce)
Instructions:
- In a large mixing bowl, combine the cooked chicken breast, crumbled turkey bacon, diced avocado, halved cherry tomatoes, finely chopped red onion, and chopped cilantro.
- In a separate small bowl, whisk together the plain Greek yogurt, mayonnaise, lime juice, salt, and pepper to make the dressing.
- Pour the dressing over the chicken salad mixture and toss until well combined.
- To assemble the lettuce wraps, place a scoop of the chicken salad mixture onto each lettuce leaf.
- Gently fold the sides of the lettuce leaf over the filling, then roll it up tightly to form a wrap.
- Repeat with the remaining lettuce leaves and chicken salad mixture.
