- 1/2 cup diced red bell pepper, or other sweet pepper
- 1 tablespoon smoked paprika
- 1 tablespoon fresh thyme leaves
- 1 1/2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon ground cayenne pepper
- 1 teaspoon white sugar
- 1/2 teaspoon onion powder
- 1/2 cup mild olive oil, or vegetable oil
- 1/3 cup sherry vinegar
- 2 lemons, juiced
- 4 chicken leg/thigh quarters
- kosher salt to taste to season chicken
