If you prefer to make just one loaf, you can halve the recipe. If your mixer is larger than 5 quarts, I don’t recommend it, as the mass of dough will be too small for the mixer.

Ingredients

For the dough

  • 4 3/4 cups (570g) bread flour
  • 1/3 cup (70g) sugar
  • 3 teaspoons instant yeast
  • 1 teaspoon salt
  • 2/3 cup (160 milliliters) whole milk, lukewarm (100°F)
  • 3 large eggs, room temperature
  • 10 tablespoons (150g) unsalted butter, softened, plus more for greasing loaf pans

For the filling

  • 2 cups (426g) brown sugar
  • 6 tablespoons (85g) unsalted butter, melted
  • 2 tablespoons (15g) all-purpose flour
  • 2 tablespoons ground cinnamon

For the syrup

  • 2 tablespoons (120 milliliters) water
  • 2/3 cup (133g) sugar
