If you prefer to make just one loaf, you can halve the recipe. If your mixer is larger than 5 quarts, I don’t recommend it, as the mass of dough will be too small for the mixer.
Ingredients
For the dough
- 4 3/4 cups (570g) bread flour
- 1/3 cup (70g) sugar
- 3 teaspoons instant yeast
- 1 teaspoon salt
- 2/3 cup (160 milliliters) whole milk, lukewarm (100°F)
- 3 large eggs, room temperature
- 10 tablespoons (150g) unsalted butter, softened, plus more for greasing loaf pans
For the filling
- 2 cups (426g) brown sugar
- 6 tablespoons (85g) unsalted butter, melted
- 2 tablespoons (15g) all-purpose flour
- 2 tablespoons ground cinnamon
For the syrup
- 2 tablespoons (120 milliliters) water
- 2/3 cup (133g) sugar
