Mum's chicken rissoles

  1. In a bowl add all the ingredients except the olive oil, and mix. Roll them with your hands if easier.
  2. Place a fry pan over low heat. Add a splash of olive oil and lay your patties on the pan. You'll need to do a few batches. Once the cooked on the bottom side, flip them over and cook the other side till brown and crisp.
  3. Serve with a salad, dipping sauce or some Greek yoghurt with lemon.
