Old-Fashioned Sultana Cake

  1. In a large saucepan, boil the sultanas in 1 cup of water until most of the liquid has been absorbed.
  2. Add the butter and syrup, and stir until melted. Allow to cool slightly.
  3. Beat in the eggs and sugar.
  4. Add the essence and dry ingredients, mixing well.
  5. Pour into a greased tin and bake at 175C for 1½ hours.
