Easy Chocolate Cobbler

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. In a medium bowl, whisk together the flour, baking powder, salt, granulated sugar, and cocoa powder for the chocolate filling.
  3. Stir in the milk, melted butter, and vanilla extract until smooth. The batter will be thick.
  4. Spread the batter evenly into the prepared baking dish.
  5. In a separate bowl, combine the granulated sugar, brown sugar, and cocoa powder for the topping. Sprinkle this mixture evenly over the batter in the baking dish.
  6. Pour the boiling water over the top of the batter and sugar mixture. Do not stir.
  7. Carefully transfer the baking dish to the preheated oven and bake for 35-40 minutes, or until the top is set and the edges are bubbly.
  8. Remove the chocolate cobbler from the oven and let it cool for a few minutes before serving.
  9. Serve the chocolate cobbler warm, either on its own or topped with a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence.
