- Preheat your oven to 375°F (190°C).
- In a large skillet, cook the ground chicken over medium heat until it’s fully cooked. Break it into crumbles as it cooks.
- Add the Great Value peppers & onions blend to the skillet with the cooked chicken. Cook until the vegetables are tender.
- Stir in the cauliflower rice and cook for an additional 5-7 minutes, allowing the rice to soften slightly.
- Drain and rinse the black beans and Mexican corn. Add them to the skillet along with the green chilies and fire-roasted Great Value taco sauce. Mix everything together until well combined.
- Season the mixture with your favorite Mexican-inspired spices such as cumin, chili powder, garlic powder, and salt to taste.
- Transfer the mixture to a large baking dish and spread it out evenly.
- Drizzle the Walden Farms Street Taco Sauce (Queso variety) over the top of the casserole.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the casserole is heated through and bubbly.
- Once cooked, remove the foil and let the casserole cool for a few minutes before serving.
