Ultimate Mexican Casserole Recipe

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground chicken over medium heat until it’s fully cooked. Break it into crumbles as it cooks.
  3. Add the Great Value peppers & onions blend to the skillet with the cooked chicken. Cook until the vegetables are tender.
  4. Stir in the cauliflower rice and cook for an additional 5-7 minutes, allowing the rice to soften slightly.
  5. Drain and rinse the black beans and Mexican corn. Add them to the skillet along with the green chilies and fire-roasted Great Value taco sauce. Mix everything together until well combined.
  6. Season the mixture with your favorite Mexican-inspired spices such as cumin, chili powder, garlic powder, and salt to taste.
  7. Transfer the mixture to a large baking dish and spread it out evenly.
  8. Drizzle the Walden Farms Street Taco Sauce (Queso variety) over the top of the casserole.
  9. Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the casserole is heated through and bubbly.
  10. Once cooked, remove the foil and let the casserole cool for a few minutes before serving.
