Step 1:
Prepare the base mix
In a large pot, heat the milk over medium heat until hot but not boiling.
Meanwhile, in a separate bowl, mix the egg yolks with the sugar and cornstarch until you obtain a homogeneous mixture.
Once the milk is hot, remove it from the heat and add the mixture of yolks, sugar and cornstarch. Stir well to integrate all the ingredients.Place the pot back on the heat and cook over medium-low heat, stirring constantly with a wooden spoon to prevent lumps from forming. Continue cooking until the mixture thickens and has the desired consistency.
Remove the mixture from the heat and add the vanilla essence to taste, mixing well.
Step 2:
Prepare the mold and pour the mixture
In a pudding mold, pour the liquid caramel, covering the bottom and sides of the mold well.
Pour the pudding mixture into the pan over the caramel, making sure to distribute it evenly.
Let the mixture sit for a few minutes to cool slightly and then cover the mold with plastic wrap to prevent a hard layer from forming on the surface of the pudding.
Step 3:
Refrigerate and serve Place the mold in the refrigerator and let the pudding cool for at least 4 hours or until it is well set.
Once the pudding is ready, remove the plastic wrap and run a knife around the edges of the mold to loosen the pudding.
Place a plate upside down over the mold and quickly turn it over so that the pudding falls onto the plate with the caramel.
Sprinkle a little cinnamon powder on top if you wish, and you’re ready to serve!
Helpful tips
You can add raisins, nuts or pieces of fruit to the mixture before pouring it into the mold for an extra touch of flavor and texture.
If you prefer a creamier pudding, you can replace some of the milk with evaporated milk or heavy cream.
For a touch of color, you can add a few drops of food coloring to the mixture before pouring it into the mold.
